Key Lime Pie
A real Stateside treat, Key Lime Pie has got the good ole taste of home written right all over it - and it’s really easy to make, into the bargain. Our tip: don’t forget to grab some real slices of lime, for that truly authentic taste.

75g unsalted butter
225g ginger snap biscuits, crushed
2 x 250g tubs mascarpone cheese
Rind and juice of 4 limes
3 tbsp. icing sugar
8 tbsp. ANCHOR® Extra Thick Real Dairy Cream

Melt the butter and stir in the crushed biscuits. Press into the sides of a 20.5 cm deep, loose-bottomed, fluted flan tin.
Place the mascarpone, limes and icing sugar in a large bowl and whisk until thick, then whisk in the cream. Spoon over the biscuit base and then chill in the fridge.
Just before serving, pipe the cream around the edges and decorate with the lime slices. Serve immediately.
